Hinotori Single Malt marks the revival of Japanese whisky craftsmanship at Hekinan Distillery, located on the coastal area of Aichi Prefecture. The region’s mild, humid climate supports slow, natural maturation, while the distillery uses pure underground water from the Yahagi River. Created by Master Distiller Tetsuji Kondo, this whisky is produced using techniques inspired by sake brewing: manual mashing, fermentation without industrial enzymes or starters, double distillation in a custom stainless-steel still based on the shōchū model, yielding a refined and balanced spirit. The blend is composed of 70% unpeated malt and 30% peated malt at 50 PPM, offering subtle yet expressive smoke. It matures between 3 years 9 months and 3 years 11 months in moderately toasted new American white oak casks, stored in a traditional earthen-walled warehouse for controlled natural aging
